Creamy Jalapeño Avocado Sauce on White Fish Fillets

It’s Springtime and everything is coming up so beautiful and green!
After having some heavier BBQ Pork yesterday I wanted to keep it a bit lighter for lunch.
So if you need a quick lunch (or dinner) this takes about 10-15 minutes from start to finish.
It will give you that boost energy for the days activities and keep you light on your feet.
It’s gluten free and paleo friendly too!
We typically don’t eat processed packaged foods. I am what they call a perimeter shopper. Shop the perimeter of the store and you end up with primarily fresh, real food. Lately we have made quite an effort to avoid gluten and a few other food items, such as white refined sugar, and most dairy products. I can honestly say, I feel really great! I’m not recommending any particular diet. However, I believe that paying attention to how foods make you feel is very important. I want to be ready for anything. How about you?
So here we have some healthy fats, some spice, a lean fish, and a fresh salad. Perfect. Let’s go!
We used Swai Fillets, they are mild tasting and lean. They cook quickly and that’s what I was after this afternoon. Something Fast!
Yield 2 servings
2 Swai fillets, fresh or thawed (any lean white fish will work, Tilapia, Orange Roughy, Catfish)
2 tsp Ghee or Grass-fed butter
1 tsp extra virgin olive oil
salt and fresh cracked pepper
squeeze of lime
1.  Heat a nonstick skillet on medium high and add ghee and extra virgin olive oil.
2.  Pat dry the fish fillets, salt and pepper and place in heated skillet.
3.  Cook for about 3 minutes and then carefully flip and cook an additional 3 minutes.
4.  Squeeze fresh lime juice over each fillet.
Simple Spring Mix Salad
3 big handfuls of Spring Mix, Organic
1 tbsp extra virgin olive oil
1 lime, juiced
1 tsp honey, raw
2 pinches kosher salt
a few grinds of fresh black pepper
1/2 small Zucchini, cut into slices
In a salad bowl, toss the spring mix with the next 6 ingredients. Divide onto 2 plates. Serve fish on top of Spring Mix.
Creamy Jalapeño Avocado Sauce
1 avocado, ripe
1/2 jalapeño, fresh minced (adjust amount depending on the amount of heat you like)
1 lime, juiced
1 tbsp extra virgin olive oil
1 tbsp chopped cilantro
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cumin
salt to taste
If you don’t have a blender, mince the jalapeño. Blend the ingredients together using a fork until you have a smooth consistency.
If you have a small blender, place all ingredients in and blend until smooth.
Adjust salt to taste. Serve over fish. (Can also be used on chicken, beef or pork and as a dip for vegetables)
